I don't use either product in my personal equipment, but I was curious if changing from one to the other and vice versa is less complicated...
In other words... does a pro shop have to completely remove the IT system before installing the Switch Grip system?

Yes, in both cases. However, it will be easier to convert from Switch Grip to Vise, only because IT has the upper sleeve and the additional pieces drilled into the bottom of the thumb hole. Switch Grip and GripLoc's have the easiest installations, but IT's are probably a little more secure.

Do USBC rules clearly state something along those lines or is it just a sound pro shop practice?

The base item for each system would not properly fit into a hole where the competing product was left installed.
